Tuesday: Shepard’s pie
Wednesday: roasted tofu, green beans, and mushrooms, basmati rice
Thursday: fettuccine with peas, asparagus, and artichokes
Friday: pad Thai
Saturday: salad and leftovers
Sunday: fish, salad, rice

I love quinoa and use it as a base for my protein bowls of quinoa, tofu, sweet potatoes, carrots, avocado, onions, with asian ginger dressing. Your menu this week looks great!
