Potato Salad, hotdogs, green salad




Tuesday:
Meatloaf, baked potatoes, green beans


Wednesday:
Chili, cornbread


Thursday:
BBQ ribs, coleslaw, cornbread



Friday:
Chicken and dumplings, fresh peas
Chocolate cake

Saturday:
Spaghetti and meatballs, salad


Sunday:
Leftovers

Favourite potato salad recipe

6 or 7 potatoes

I use red potatoes and do not peel them
I made a pact with myself when I was cooking for 5 teenagers that
 I would never peel another potato...
For as long as I lived.
You may do as you wish...

1 TBSP salt
2 TBSP bacon drippings
3 or 4 hard-boiled eggs
Chopped red onions (as much as you prefer)
Thinly sliced celery (as much as you prefer)
1 3/4 cups Hellmann’s mayonnaise
2 tsp yellow mustard
2 TBSP sour cream
2 1/2 tsp apple cider vinegar
Black pepper
6 slices crumbled, cooked bacon

Cube and boil the potatoes with 1 TBSP of salt till just tender.
Drain,add the bacon drippings,  and shake the colander to coat.
Cool completely.
In a large bowl, combine cooled potatoes, red onions and celery.
In a separate bowl combine mayonnaise, mustard, sour cream, and vinegar
And stir it into potatoes.
Add salt and pepper to taste.
Just before serving garnish with crumbled bacon, parsley and paprika.
