Fall hodgepodge

1). It's officially fall y'all. In the norther hemisphere anyway. Any signs of it where you are? What's your favorite thing about this time of year?

The leaves are beginning to change here on the coast of Massachusetts. Pinecones and acorns are dropping and so are the temperatures. I have had to get my sweaters out of storage. 

I know I am in the minority here but I love the earlier evenings. It's just so cozy and I don't feel so terrible about going to bed early. 


2). Have you visited any "falls" in person?

I have done some hikes and seen a few very minor waterfalls but nothing that anyone would really talk about. 

3). What's something you'll miss about summer?

Being able to run outdoors without having to put on shoes, a coat, hat and mittens. Also, open windows and fresh air.

4). A favorite fall recipe?

Oh my goodness so many! Cooking in the fall is my very favorite! I eat mostly plant-based now but I love to roast squash and other vegetables to serve with brown rice. Also, apple anything.

5). Something you enjoy but have allowed to "fall" by the wayside.

Walking out of doors. It's been pretty hot and rainy all summer and I have had a hard time motivating myself. 

6). Insert your own random thought here:

I am making banana bread today and granola. I will be making homemade pizza for dinner. 

It's been grey, windy, and cool here for almost a week now. I secretly love it! It feels so cozy.

  4. HI, to answer your question about the stuffed pepper soup. The "meat" i use is ground impossible "beef"...the plant based vegan beef. WHen I first made it for my husband he couldn't believe it was plants and not cow!! :)

  5. I never got around to commenting on last weeks posts and figured I needed to play catch up. I hate posting and then not commenting. Uggh. We'll see if I get around to posting this week. I enjoyed your answers. It's cooler here and actually this morning I was a bit warm so I opened the window by my desk to let some cool air in.
